Soup & Salad

Let's Chicken Soup

Ingredients: 
  • 6 pieces of chicken (back, wings and neck) remove the skin and fat
  • 10 cups of water 
  • ½ teaspoon turmeric powder 
  • ½ coriander powder 
  • ½ cumin powder 
  • 2 tablespoon coconut oil 
  • 1 medium onion (chopped) 
  • 2 cubes of chicken low calories 
  • ¼ cup star pasta (opinion) or rice

Method:
  1. In a pot, boil the chicken pieces, water, coriander, turmeric for 30 minutes or more.
  2. Use sieve and strain the stock in a bowl.
  3. Remove chicken meat pieces and put in the stock. 
  4. In a pot, put oil, onions and fry until slightly brown. 
  5. Add the stock, and the chicken cubes, pasta/rice. 
  6. Let it cook until pasta/rice is cooked.

Makes 12 servings. 


Bacalco Salad (Salt Fish)

Ingredients: 
  • 2 long strips of dry cod (soaked over night, wash well until the salt is removed)
  • 3 tbsp olive oil 
  • 2 onions 
  • 2 scallions (spring onions) 
  • 1 avocado 
  • ¼ copped cilantro 
  • 3 cloves of garlic
  • ¼ cup Red wine vinegar
  • ½ lemon 
  • 1 big tomato (chopped)

Method: 

  1. Fry/steam cod in oil until cooked then remove from the fire.  Put in a bowl.
  2. Add the remaining ingredients, except cilantro 
  3. Put it on a serving dish, sprinkle cilantro on the top and serve 

Enjoy as a side dish
